Ingredients:

  • 6 boneless, skinless chicken thighs
  • ½ tsp paprika
  • ½ tsp Italian seasoning
  • ¼ tsp black pepper
  • ½ tsp salt
  • Olive oil
  • 1 ½ cups baby spinach

For the Cream Sauce:

  • ⅓ cup sundried tomatoes, chopped
  • 3–4 garlic cloves, minced
  • ⅓ cup shredded Parmesan cheese
  • 1 ½ cups heavy cream
  • 1 tsp corn starch
  • Salt & black pepper to taste

Step-by-Step Instructions:

  1. Preheat oven to 425°F (210°C).
  2. Place chicken thighs in a baking dish. Season with paprika, Italian seasoning, salt, and pepper. Drizzle with olive oil and rub the seasoning in. Add spinach on top.
  3. In a bowl, whisk together heavy cream, garlic, corn starch, salt, and pepper. Stir in sundried tomatoes and Parmesan. Pour sauce around the chicken.
  4. Bake for 16–20 minutes. Remove, cover with foil, and return to oven for 5–10 minutes.
  5. Uncover and serve hot.
