Ingredients:

  • 1 medium onion, diced
  • 2 large carrots, grated or diced
  • 300–400g chicken (boneless), cut into small pieces
  • 3–4 tbsp vegetable oil
  • 300g basmati rice
  • 1 tsp salt (adjust to taste)
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • Freshly ground black pepper, to taste
  • 1 bay leaf
  • 7–8 garlic cloves (whole)
  • 100 ml water (for simmering veggies)
  • 900 ml water (to cook the rice)

Cooking Instructions:

  1. Heat oil in a Dutch oven. Sear the chicken until lightly golden.
  2. Add the diced onion, sauté for 2–3 minutes.
  3. Add carrots and 100 ml water. Cover and let simmer for 5–7 minutes.
  4. Add basmati rice, paprika, salt, turmeric, black pepper, and bay leaf.
  5. Nestle whole garlic cloves into the rice.
  6. Pour in 900 ml of water — it should cover the rice by about 1 cm.
  7. Taste the broth and adjust salt if needed.
  8. Give it a gentle stir, cover with a lid.
  9. Simmer on medium heat for 15 minutes.
  10. Let rest 10 minutes before fluffing and serving.
