Ingredients:
- 1 medium onion, diced
- 2 large carrots, grated or diced
- 300–400g chicken (boneless), cut into small pieces
- 3–4 tbsp vegetable oil
- 300g basmati rice
- 1 tsp salt (adjust to taste)
- 1 tsp paprika
- 1/2 tsp turmeric
- Freshly ground black pepper, to taste
- 1 bay leaf
- 7–8 garlic cloves (whole)
- 100 ml water (for simmering veggies)
- 900 ml water (to cook the rice)
Cooking Instructions:
- Heat oil in a Dutch oven. Sear the chicken until lightly golden.
- Add the diced onion, sauté for 2–3 minutes.
- Add carrots and 100 ml water. Cover and let simmer for 5–7 minutes.
- Add basmati rice, paprika, salt, turmeric, black pepper, and bay leaf.
- Nestle whole garlic cloves into the rice.
- Pour in 900 ml of water — it should cover the rice by about 1 cm.
- Taste the broth and adjust salt if needed.
- Give it a gentle stir, cover with a lid.
- Simmer on medium heat for 15 minutes.
- Let rest 10 minutes before fluffing and serving.
